A tandoor is a clay oven that runs far hotter than a domestic grill. That heat is what seals the marinade onto the meat in seconds, giving tandoori chicken its blistered edges and its characteristic smoke. Nothing else cooks quite the same way, which is why tandoori dishes are worth ordering where a real tandoor is in use.
At Indian Curry House-Banff the marinade goes on well ahead of service so the yogurt and spices work right through the meat. The chicken comes out of the oven crisp-edged and still juicy, with charred onions and a wedge of lime. It is a naturally lower-fat way to eat here, since the cooking uses no gravy at all.
Our kitchen uses halal meat, and Muslim travellers have singled us out as the place in Banff where they can eat comfortably. Combined with a working tandoor and a menu that also covers vegetarian and vegan diners, it makes us a straightforward choice for mixed groups who all want to eat at the same table.
We are upstairs at 225 Banff Avenue in downtown Banff, a short walk from Downtown Banff, Tunnel Mountain, Middle Springs, the Upper Hot Springs and the Banff Springs Hotel area. The kitchen runs until midnight daily, so the tandoor is still going when most of the town has stopped serving.
