Butter chicken was created to use up tandoori chicken, and that is still the secret to a good one. The chicken is marinated, grilled in the clay oven until the edges catch, and only then simmered in the sauce — so the smoke stays in the meat instead of being boiled away.
Our gravy is built from ripe tomatoes, ginger, garlic and warm spices, smoothed with butter and cream and lifted with a pinch of dried fenugreek. It is deliberately mild, which makes it the dish families order for children and the one we recommend to guests who are new to Indian food at Indian Curry House-Banff.
After a day on the slopes or on the trail, this is exactly the sort of meal you want: rich, warm and generous, with naan or rice to mop the bowl clean. It is also one of our most-ordered takeout dishes, because the sauce holds its heat on the walk back to your hotel.
