Chicken marinated in yogurt and spices, grilled in the tandoor for colour and smoke, then finished in a creamy tomato and onion masala. It is the curry most first-time guests order — and the one plenty of them come back for.
The dish begins with the tikka itself: boneless chicken marinated in yogurt, ginger, garlic and spice, then cooked at high heat in the clay oven so the edges char slightly while the inside stays juicy. That smokiness is the difference between a real tikka masala and a plain tomato curry.
The grilled pieces then go into a masala of onions, tomatoes and whole spices that has been cooked down slowly, with cream stirred through at the end. The result is rich but balanced, medium in heat by default, and easily made milder or hotter to order at Indian Curry House-Banff.
Plenty of kitchens poach the chicken straight in the sauce. We do not. Grilling first is slower, but it is what gives the dish its depth — and it is a big part of why guests describe our food as authentic rather than generic. Halal meat is used in our kitchen, something Muslim travellers in Banff have specifically thanked us for.
We are upstairs at 225 Banff Avenue in the centre of downtown Banff, open daily until midnight. Guests staying around Downtown Banff, Tunnel Mountain, Middle Springs, the Upper Hot Springs and the Banff Springs Hotel area walk over for dinner, and takeout is popular with skiers and hikers who would rather eat somewhere warm and quiet.
